Delicato Family Cookbook Recipe:


  • 20-pound turkey
  • Olive oil
  • 2 cups California dry white wine
  • Salt and pepper to taste
  • Carrots, potatoes, celery, peeled and quartered (optional)
  • Dressing:

  • 2 cups cooked white rice, cooled
  • 1-1/2 pounds lean ground beef
  • 3/4 cup Romano cheese, grated
  • 1 egg
  • 1/4 cup olive oil
  • 3/4 cup minced parsley
  • 6 large garlic cloves, chopped
  • Salt and pepper to taste

  • Rinse and dry turkey. Combine ground beef, onion, rice, garlic, parsley, cheese and egg. Mix well. Stuff turkey with dressing. Rub bird with olive oil. Pour wine over turkey. Season skin of turkey with salt and pepper. Preheat oven to 500°. Place bird in oven for 20 minutes, tightly covering the pan. Reduce temperature to 375° and cook bird for an additional 3 to 3-1/2 hours. Carrots, potatoes, and celery pieces may be added during the last 30 minutes of cooking. More liquid, wine or water, might be needed during the cooking time.
